If I delete the google photo app will I lose my photos in iCloud?

You shouldn't but be sure that Google Photos doesn't have access or a link to your iCloud Photos prior to deletion. In other words, sever that link (within the Google Photos app) first before deletion. Also, remember, if you delete their app from your device, your photos are still stored in their app.
