Why is Quicktime no longer working properly?
I recently upgraded to Big Sur, and Quicktime is no longer working properly. Specifically, screen capture is no longer showing any controls to start and stop recording.

Why Quicktime Player Won’t In Big Sur:
Apple ceased support for QuickTime 7 for macOS sometime in 2018. So, it does not operate on it.

QuickTime Player 7 was replaced by QuickTime Player X 11 years ago. QTP X works just fine in Big Sur.

Correct. It is the version that doesn’t work.
Having replied, on a Virtual Machine it might operate, though.
The control panel can be anywhere, not just at the bottom. You may have to look for it anywhere on the screen.
Once you clink on the Record button the Stop button appears in the menu bar:
To clarify:
You are using QuickTime Player running on Big Sur and when you go to make a screen recording, you don't see these controls at the bottom of screen?

That’s correct. The controls did nothing appear as expected.
You should see the cursor change to a camera icon. Click it anywhere on the screen. There will be a new icon in the menu bar to click to stop the recording.
