I'm using the column view and adjusting the sizes of my chosen columns as appropriate for my view. However, every time I restart Mail it chooses its own widths so my columns only fill about 2/3rds of my window. I drag them out again and that's fine until I restart Mail again.

i’ve found a partial solution. It was worse when I had the size column on the extreme right hand side. I’ve deleted that, and left a reasonable white space to the right of my final column. That seems to leave it fairly stable - for now!
Thank you for your help! instead of using full screen mode, I just stretched the window to the MacBook size and then exited mail and rebooted as a test. Using the stretch method preserved the column widths.

FWIW, I checked two of my Macs running Big Sur and don't see the problem. Are you using side or bottom preview? Perhaps someone else will have an idea.
I have the same problem on my MacBook. Always resizes columns to narrow width each time I restart mail.
I'm also having the same issue with column width moving back to default spacing after wakeup or restart.
Thanks for the suggestion. Traditionally I don't use a preview - I double click an email to open it in its own window - but I've tried both views and it's still the same.
I've just tried my laptop - that doesn't have the problem!
This problems happens only if I start Mail in fullscreen mode.
When I resize the Mail window to not fullscreen, quit Mail and reopen it, the columns remain adjusted correctly.
Anyway, that's bad as I usually use Mail fullscreen on a dedicated screen.
Thank you! After adjusting the columns in stretched zoom mode, I quit Mail, rebooted and launched Mail again.
I can confirm that column width remains as adjusted, even when entering fullscreen mode again.
