I cannot update my M1 MacBook Pro to 11.0.1. It downloads the update, but never starts the update process. It will say it will be ready in 15 minutes, but never starts the install. I've let it sit overnight several times with no luck.

I had to do the same for 11.1. Don't use the Control Panel, go through the App Store to download. The 11.1 file was 12GB. So, I don't think they are doing patch updates, but the entire OS.

Fixed it. Just downloaded the installer directly from Apple instead of the Auto-updater doing it. I was able to run the installer after that.
The reason I asked is because I received my M1 MBA Nov 17 and within an hour of setting it up I had the 11.0.1 update notice. I had no problem with the update. Don't know why yours is. Yours is the first post I've seen with an update problem. Of course you have 90 day free phone support.

Where did you get the standalone installer for 11.0.1? I thought Apple had stopped doing standalone patches since Big Sur ws released? Whenever I run System Update it says my Mac is up to date (11.0) which is obviously incorrect, since both 11.0.1 and 11.1 have been released. I'm running the new M1 Mac Mini.

How long ago did you get your MBP? The 11.0.1 update came out weeks ago.
I've had it about 10 days. It's one of the new M1s which came pre-installed with 11.0.0.
