I bough FCPX today. I'm all looking forward to redeeming my purchase until I'm prompted that FCPX as of a few weeks ago is only available for Big Sur... WTF?
Is there no way to download and install a version compatible with Mojave?

Did you get that message from the App Store upon entering your code? Or did you hear someone saying that?
The current version of FCP only runs in Catalina 10.15.6 or 10.15.7, or in Big Sur, but once you have complete a purchase you can get an older version from the App Store.
I suppose you bought the ProApps bundle for education, right?
Then here is what you need to do: ask a friend with a mac running Catalina 10.15.6 or later, or Big Surto let you login to the App Store on their mac, with YOUR Apple id. Insert the codes to confirm the purchase, and then if the applications were downloaded, delete them from the drive, and logout from the App Store.
In your mac running Mojave, go to the App Store, click your account in the bottom left. You should see FCP among your purchases (along with the other apps in the bundle). Click Download. You will be warned that the current version does not work and be asked if you want the most recent version that is compatible.

Another option is available if you have a spare hard drive. Install Big Sur on the spare drive and then boot your Mac off that drive and then do what Luis outlines.
Awesome dude, my girlfriend has Catalina running on her computer. I'll try that out right away.
It was indeed the App Store that prompted me with that message upon entering my code.
I bough a full version via Cyberport.
Yes, there is.
??? Care to share some of that knowledge ???

The equivalent or similar to Best Buy in Germany/Austria
