Iphone backup and restore on new iphone

Hello,


In the past when I changed Iphone, I had to simply backup my old iphone and then restore the backup to the new Iphone, all data would transfer (through Itunes).


Now I hace Catalina 10.15.7.


I just bought a new Iphone 11 pro and would like to transfer all my Iphone 7 data (including apps, photos) to that one. So I go through the finder, backup my old iphone (backup all date on Mac), then try to restore the backup to the new Iphone 11. But the restore is very fast and nothing (Apps, photos, etc..) appears on the new Iphone.


I don't want to use Icloud, having not enough space.


Can someone please be kind and explain how I could do a full backup as in the past?

I actually didn't know about the possibility to simply transfer through Bluetooth (and Wifi?) which is quite simple.


Still, if anyone wants to backup an iphone from time to time without using (and paying) ICloud, I noticed I could do that easily in Windows on a PC, through Itunes, while there was a bug in IoS on my Mac..
