recently I have been trying to use daisy disk and omni disk sweeper and they have said that my SSD ( Macintosh HD) is read only permission. I have tried changing the permissions by disabling SIP but it says when I try to change the disk permissions "I don't have permission". so is there anyway I can disable and override the system to change the disk permissions.

Assuming you are running a recent version of macOS you cannot change permissions because things are now locked down tightly. Open System Preferences->Security & Privacy->Privacy->scroll down to Full Disk Access and add those two apps. Now see if they run. Whatever you do DON’T mess with permissions unless you are a Unix guru.

Beginning with macOS 10.15 Catalina the macOS system files located on the "Macintosh HD" system volume is now a read-only volume so you can no longer write to the system area while booted into macOS regardless of the permissions shown. You can only write to the user volume which is "Macintosh HD - Data". See this Apple article for details:
