When pairing an iPhone 12 pro max with a MacBook the MacBook displays a quick screen with a number to be matched on the iPhone but this number does not display on the iPhone. Where is the number supposed to display on the iPhone?

What are you trying to pair the two of them for? They are not designed to be paired together. While you can use Bluetooth for some things between the two devices, you just need to have Bluetooth turned on, not to have them actually paired.
I am trying to connect the phone to the Mac to answer calls on the Mac. I was able to do it on my iPhone 6 Plus.
