Terrible scans using Image Capture

Image capture no longer has the options it use to for scanning, (they were "sharpen", and another was descreen, I think?, and can't remember what the other ones were called, but regardles, I NEVER USED THEM). So now these options are gone... but the resulting scans look like some of these filters were applied automatically, like a "Dust and Scratches" filter from PS has been applied on a "high". Looks terrible. Faces are over smoothed, notice the blacks have no sign of dust, and detail is lost everywhere.

I use a MacBook Pro, and updated to Big Sur... this wasn't happening before the update

My printer/scanner: hp Color LaserJet Pro scanner (MFP M479fdw).

Would love any advise.
