When connect to my other MacBook Pro, the Desktop and Documents folders are empty (however, all the other folders are OK).
Please see attached screenshots.
Why is that?

As you can see, "Read & Write" for everyone...

Apple menu -> System Preferences -> Security and Privacy of the host machine with the data needs to have full disk access enabled under Privacy. Try enabling that. Note if the padlock is locked, you'll need to click on it with your administrative credentials to check any unchecked items in that panel.
Select the folders that are invisible to the connecting computer, and select File menu -> Get Info. Ensure other connected users have permissions to read and write files to those folders.
If Filevault is enabled on the host machine, that may disable sharing privileges. Turn it off and wait for it to decrypt the drive before sharing.
