I can confirm that, for me, toggling the "Organize by Conversation" setting under the View Menu off and then back on reset Apple Mail to correctly display the view column with the dual arrows and then display the disclosure triangles beside mail conversations.
Still not there for me:

I'm moving quickly away from Apple Mail and MacOS anyway, this just gives me another reason.

I had it set as mentioned above... The arrow just appeared and I'm not sure why. I was trying several settings and it appears one worked. I'll post if I figure what breaks/fixes it.
Yes, I see the triangle (well now downward ^) on the mailboxes as before. What I'm not finding it that on a message thread. Here's a thread with no way that I can find to drop down the messages and see them individually:

I've never used Column layout, so didn't know about that.
However, I do see it in Big Sur, albeit the arrow is dim and set to your highlight color.
There should be a column with a header like this:
which, from the Help document, they call the Conversation column. It is not removable, so you should see it.
I did and played with the other ones in the View menu.
But, I unchecked it and rechecked it and now it showed up. I am guessing when it transferred settings from the update, it was checked and that didn't translate over to the new green circle column. But it is there now.
If you have "Organize by Conversation" checked when you first update and do not see the column, just uncheck and recheck and it should fix it.
