Apple Watch Seeies 6

Does all Apple Watch Series 6 options have all the blood oxygen content and all the new updates. I’m debating between the Nike Series 6 and the Gold Stainless Steel Series 6 watch?

Also the Gold Stainless steel series 6 watch only comes in GPS and Cellular but they don’t carry my carrier. Would that be a problem?
