Not sure if you know, but you can only hook up one monitor to USB-C at once. To get dual displays, you have to have the other one on HDMI. If you set it up with that configuration, then check your About this Mac to see if it recognizes both monitors then you should be good to go. Reboot if there are any issues and check displays again. If you've confirmed that both monitors work individually in both USB-C and HDMI and it still doesn't work, you should probably check in with official Apple support.
I do have an issue on waking from sleep that the USB-C monitor sometimes isn't recognized if another adapter is plugged in to the other USB-C port and I found out from Apple Tech Support that this is a known issue. Unplugging both USB-C devices and replugging the monitor generally resolves the issue.
