When I updated to Big Sur initially, I was suddenly unable to print from any of my three HP printers. Does the latest update correct the Big Sur/HP incompatibility?

Only HP can fix that. Check with them for updated drivers, or if it is AirPrint capable, add the printer using the AirPrint driver.

HP Revoked their own certificates. Revocation cannot be undone. If it could, it would be useless. Revoking them signals that they are compromised and anything using them cannot be trusted.
HP has to release new software with valid signing certificates. Apple can't do anything about it short of ignoring revoked certificates which would be asinine.
I realize that HP started the problem but I hoped that since it coincided with an update HP could work with Apple to correct it with an update. I will continue to explore other options for my beloved HP Color Laser Jet 3600n.
