I got a new series 5 Apple Watch. I wanted to give my series 1 watch to my granddaughter who has an iPhone 6. It does not want to pair because apparently even though I reset the watch to factory settings - it doesn’t take away the watch os updates. Is there a way to get it back to os5 so she can pair it with her phone ? (And no another phone is not an option )

Once you upgrade the software on an Apple device there is no way for you to downgrade. Sorry.
Although it may not help, the only possible option is to contact Apple Support or make a reservation at the Genius Bar. Either way:
