Can I share my purchases, but not share payment methods? my mom and brother and I are all on the same family sharing account, which is great for sharing our music, appleTV, apps. What we can't figure out is how to make sure our purchases and subscriptions are only charged to each of our own respective payment methods?

In Family Sharing, the organizer's payment method will be charged for all purchases.
You can buy/redeem Apple Gift cards to the account. Charges will be deducted from the account balance before the organizer's credit card is charged.
