I'd like to remove a good bit of the crap that Apple installs with the OS, i.e. - fonts, voices, loops, foreign language support files, user pictures, printers, various apps and, perhaps, a few more types. Is this really not possible with Big Sur?

You realize that now someone has to post that, right :)
Apple logo (upper right of screen) > About this Mac > Storage > Manage.
That should help you sort some of it out. Just remember, removing fonts could kill your Mac.
P.S. Don't start without having a full backup of your computer.
The Big Sur operating system is installed on a signed, read-only partition meaning that anything installed by Apple, you lack even root privileges to remove.
Thank you VikingOSX. I was afraid of that. Won't be upgrading from Catalina anytime soon.
