Because that is how imap accounts work. Email is synchronized across all devices accessing the account. If you want to keep emails then move them to you Mac rather than keeping them in the synchronized email folders.

Thanks very much Mr Fishman. That makes sense because all emails I had previously moved to subfolders under the heading "On my Mac" in the Mail app were retained. Does that mean I have to move each email after receipt to a subfolder or can I instruct the MacBook to save everything under the heading "Mailboxes" in the app as well?
