Hi, I just ordered an apple watch SE, but on my order it only says apple watch SE GPS. But I paid 399, and I think I added cellular to the order. Does GPS also mean that I got cellular or not? Would I have to cancel my order in order to get cellular?

I suggest you find the links on your purchase confirmation email to edit or cancel the order. Unsure if there will be a person to person option to discus this, but if not delivered you should have a finite time to return/cancel.
Hey guys, thank you so much for the help. But I have been digging all evening and eventually found out that the Dutch providers don’t support cellular on an Apple Watch. So in the Netherlands the cellular option isn’t available. I could buy one from Germany but I wouldn’t be able to turn on roaming so eventually it would be useless for me. I wish I would’ve known this before buying but I hope I will still be able to enjoy the watch. Thank you so much for the help, wishing everyone happy and healthy 2021!
If you get an Apple Watch SE GPS + Cellular model, then you can.
If you get an Apple Watch SE GPS only model, then you can maybe call if your cellular provider supports WiFi calling, And you have enabled WiFi calling on your iPhone, AND you have enabled WiFi calling on your Apple Watch, AND you are on a WiFi network that is allowing your Apple Watch access.
Otherwise, no iPhone, no WiFi, no calling, no messaging, etc...
I have had a GPS Only Series 4 (2 years), and since my iPhone is rarely far away from me, I have All the features and no extra charges on my cellular bill (in the U.S. that would be $10 each month or over 2 years $240.00 plus applicable taxes and fees).
I have not felt the need to get a cellular model.
My Wife, that does not want to put an iPhone in her pocket all the time, asked for and got a Series 6 Cellular for Christmas (just activated the cellular today). We went for a walk without her iPhone and she was testing iMessage, Walkie-Talkie, cellular calling, etc... While I was walking with her, exchanging the iMessages, Walkie-Talkie, cellular calls on my Apple Watch, because I had my iPhone in my pocket.
NOTE: She had the same model GPS only Series 4 during the past 2 years, and while she often kept her iPhone in the kitchen, she was able to answer phone calls, messages with me and other family members, get the current weather, etc... while she was in the bedroom (maybe 50 feet away on a different floor).
So it was not that should did not get full functionally from her old GPS only Apple Watch, she just does not carry her iPhone everywhere, and did not want to be out of contact if she went for a walk for bike ride forgetting to grab her iPhone.
I looked when I tried to order a new one, but can a SE even call without your phone nearby? Or do I need to buy the 6 series for that? Thank you for replying.
Okay so when I am purchasing one, where is the option of GPS+cellular? Cause I can’t find it and then the onky option I have left is the GPS only :/
When you go to buy the Apple Watch SE, after selecting the Screen Size you get to select GPS or Cellular
