After I update to iPadOS 14.3 my Apple Pencil 2 double tap function not working

See Change Apple Pencil (2nd generation) settings - Apple Support. Try turning the gesture off and on again.

I also had this problem. I disconnected my pencil from bluetooth and reconnected, everything went back to normal. It worked for me. Hope I could help.
