Iphone 12 pro max camera

Why is the camera completely horrible? I switched from an iphone 8 plus to the iphone 12 pro max and i’m so disappointed with the image quality. The photos are automatically edited (sharpened, saturated and grainy). And the front camera is so smooth on low light, I sent photos to my friends and they asked me if I switched to iphone 4 lol. The iphone 8 photos were amazing, people would constantly ask me what phone i was using. Is it possible to switch off this automatic effect? When I’m about to take a photo or even a split second after i do the image looks perfect and then the phone creates this sharpened ugly samsung effect out of nowhere!!!!!!! I already switched off hdr mode, scene detection, everything. Help
