If I do a factory reset on my iPhone 11, will it keep my current phone number?

Yes. The phone number is contained in the account information that is on your SIM. Restoring to factory will delete all content on the iPhone and bring it back to factory. You will need to set it up again, and when you do, it will read your phone number from your SIM.
