When making a screen recording of a movie on my MacBook Pro using Quicktime do i need to change my energy saver options so the screen saver doesn't activate or will my MacBook keep recording the movie even when the screen saver is running?

you don't need to adjust your energy or screensaver preferences. the screensaver will not activate while doing a screen recording. this applies wether you do a full screen recording, or just a selected portion of the screen.
