Additional to the gear gone in the new macOS big sur version, I noticed we can edit and take a poster frame within the edit portion of the video, but I cannot move the video frame by frame before taking a poster frame, I used to do it with clicking on showing scanning buttons but the scanning buttons are gone also, do you know if there is a way to move the video frame by frame ?

It seems no longer to be possible directly in Photos 6 on Big Sur.
Try the following as a work-around:
If you want to save the selected frame you select in QuickTime Player as an image do the following:
This will give you a better resolution than taking a screenshot of the selected frame.
