I reset my Apple Watch and gifted it to my son but my son can’t pair it

I erased and deleted my Apple Watch from my phone and gifted it to my son for Christmas. I says it won’t allow him to connect it to his phone, it continues to ask him for a email and password. What do I need to do if I don’t remember the password but I do know the email.
