Migration using Ethernet cable

I have been fighting with Migration Assistant for a week now, trying to get everything from an old 2011 MacBook Pro to latest M1 Macbook Pro.

First attempt using WiFi wasted 3 days of waiting for data transfer. I have just 146GB of stuff to migrate. Decided to try direct cable connection using RJ45 Ethernet to Thunderbolt. Migration Assistant keeps trying to use WiFi.

Ideas on how to do this welcome.

Have you installed all available updates on both Macs? Often an update can resolve many issues, and this helps us rule that possibility out.
