iPhone 11 Pro Max's USB synchronization issues with a new 2020 13" MacBook Pro's Big Sur v11.1's Finder.

Hello.

A few issues in using updated macOS Big Sur v11.1's Finder with an USB connected iPhone 11 Pro Max (updated iOS v14.3; no iCloud) after migrating to a new 2020 13" MacBook Pro (Intel) from an old 2012 13" MacBook Pro (MBP)'s Mojave v10.14.6 during the holidays:

1. Why does Finder automatically sync iPhone when I told it not to in the past with a 2012 13" MacBook Pro? I told it not to do that, but it still forgot my request even I told it in the new MBP.

2. Its sync got stuck at Contacts part that never finish. I remember this problem in the old MacBook Pro's iTunes. I could cancel/abort it and retry to make it work. However in this Finder's method, I can't abort/cancel. How do I abort/cancel/skip like in old iTunes? Is it hidden somewhere now? I miss iTunes. :(

Thank you for reading and hopefully answering soon. :)
