It appears your scanner is AirPrint compatible, so one option is using AirPrint if your scanner isn't detected via cable: Set up a scanner to use with Mac - Apple Support
Additionally, updating macOS can automatically update the drivers, or you can check the Epson website and manually install updated drivers compatible with the version of macOS you're using:
