I got my wife a new Apple Watch. We've been trying to setup her Health App but we've found that because all of our accounts run through my AppleID we can't get any of the information to change.
How do I go about erasing my health data from her phone and watch so she can use it?

She needs her own Apple ID. Apple IDs should not be shared for any reason.
You will need to sign out of your Apple ID from her iPhone, and have her create a new Apple ID for her and sign in to her iPhone and Apple Watch to track her own health data.
