See picture, I tried to customize the touchBar from sidecar on iPad screen, it supports remove from touchBar, but it does not support to add objects into the touchBar, for example when i drag an object to the touchBar, what I can see is only the remove option. OK, I did remove, then I tried to add it back to touchBar, still only show remove form touchBar, no add option. Big Sur 11.1, iPad Pro 14.3. Do you have this issue?

First, let's restart both your iPad, and Mac computer.
Next, toggle Handoff on both devices: Use Handoff to continue tasks on your other devices
Once done, we recommend that you toggle the Bluetooth feature on both devices next.
Use your iPad as a second display for your Mac
