Hi My daughter is about to start a law degree what size of storage would be best for her ?

I have no idea. It completely depends on what sort of files and apps she plans to store on her Mac, and how large the files created by her apps will be.
If she plans to store her documents in a cloud solution (such as Google Drive or Microsoft OneDrive) she might not need that much space. (Note that I didn't mention iCloud; that only syncs files between devices - it doesn't actually remove the files from the internal drive unless you're running low on storage.)
If she plans to store her documents directly on the internal drive, I'd probably recommend at least 512 GB so that the Mac doesn't run into storage issues halfway through its lifetime.
IMPORTANT: Fast internal storage can only be configured at the time of purchase; the internal SSD is soldered directly to the main logic board. Storage can be "upgraded" afterwards by purchasing an external hard drive or SSD.
