Script Editor app and Applescripts not working under Big Sur

For some reason, after the update to Big Sur 11.2, my Script Editor is no longer working. The app launches, but it refuses to open any Applescripts (no error message), and the 'Default Language' pop-up in the Preferences is blank (see screenshot).

Anyone come across this before?

Thanks for the help everyone. I eventually solved the issue by removing the contents of the ~/Library/Application Support and ~/Library/Caches folders and restarting. I'm not quite sure which particular subfolder was the culprit, but something in there was causing an issue with Applescript.
