That should be easy to fix. Just go to system preferences/keyboard/input sources, click on your 2-set keyboard, and over at the right there’s a drop down menu where you can choose the output format to be only Hanja with no parentheses.
PSS In Word for Mac, to get Hanja it seems I need to type Option Shift Return (hold down option shift at the same time and then press return).
Which Korean IM and which apps? Are you in Big Sur (your profile says a MacOS from many years ago)?
What happens when you do Option Return after typing a syllable in hangul? This is what I get after typing "han"

Does your screen look like mine, except you have only one item in the Candidate Window, and that item is hangul instead of hanja?
Does this happen in TextEdit and Pages? Also with HNC Romaja input?
I have not seen this problem with other users, so there is presumably something messed up on your machine. Do you have any antivirus stuff installed?
Here is some info on posting a screen shot, in case that has proven difficult:
TextEdit and Pages are two Apple apps which people often use to create text documents, and those are what I have used for testing. You find them in the Applications folder. What app or apps are you using currently where you have this problem? I want to try and exactly duplicate what you are doing.
HNC Romaja is another IM for Korean, where you type han instead of gks. It is found in system prefs > keyboard > input sources when you click on the + button to add a new keyboard.
When you are typing Korean in Windows, you are not using any of Apple's software, so you would not have the same problem.
PS I have just tried MS Word for Mac, and Korean input appears to be broken as you describe.
Please try Pages or TextEdit and let me know if the Korean IM works in those apps for you.
Yes, that works on TextEdit and Pages. But here is what happens: a hanja character pops up, but it's enclosed in parentheses. Every time. Looks like this:
Option/shift/return works on Word, but the result is the same - a hanja character pops up, but it's enclosed in parentheses. That means to type a text, one would have to key in the hangul, convert to hanja, and then delete the parentheses, either character by character or as a separate step after keying. Doesn't make sense.

Thanks for the info! You have to post a screen shot like I did. (For some crazy reason, despite complaints, the Apple forums do not yet accept certain non-Latin scripts, including Korean and a number from India and SE Asia).
What happens is this: using the Korean IME, I type in gks, and up comes han [in hangul]; I then hit option/enter, and han [in hangul] comes up again. I never get hanja. FYI, this began happening a couple of years ago following one of the many "updates"; I corresponded with several people at Apple, none of whom could correct the error, and the error has not been corrected in any of the subsequent updates.
No, my screen does not look like yours. As I said, when I type in gks [han], [han] appears in hangul. I do not get a candidate window. I don’t know to what you are referring when you say TextEdit and Pages and HNC Romaja. The Chinese traditional IME works fine. I do not have antivirus stuff installed. I have described what is happening, so I don’t think a screen shot would make any difference. As I mentioned, this malfunction also occurred on my old iMac, but the Korean IME works fine on Windows. And, in case you were wondering, I do understand how to work with Korean on a computer – I have been doing so almost continually since 1983.
Um... just to clarify: I can create hanja using the 2-set Korean IME via Word on a PC without any problems, and have done so for years. But for the past several years I have not been able to create hanja using the 2-set Korean IME via Word on the iMac - either on an older model or the new one I purchased in December 2020. Looks to me as though the place to focus attention is on the iMac interface with Word and the 2-set Korean IME.
PS here is what I get on Big Sur 11.1, Pages, 2-set Korean IM, typing gks and then doing option return (have not yet had time to upgrade to 11.2):
