Unfortunately, there is no setting to change that time. However, once you start entering your passcode, the screen should remain on.
In addition to the above...
Your iPad Pro supports Face ID, which means you can avoid entering your passcode but for once every day or two.
Use Face ID on your iPhone or iPad Pro - Apple Support
Face ID can work well in some situations, and not in others. But it does avoid needing the passcode quite as often.
Downside: longer between times when you have to remember your passcode.
Log some feedback with Apple about lengthening the passcode prompt timeout, too: Product Feedback - Apple
I would also take a look at the information that MrHoffman provided regarding Face ID. That way you do not have to use the passcode unless you restart the iPad or do not use it for an extended period of time.
