My iWatch 3 will not update to iWatchOS 7

Per Apple's website my iWatch 3 should be able to go to iWatch OS 7. My phone & Watch both show it is up to date at 6.3, so how can I get it to go to 7?

You need a phone with ios14 or higher which is an iphone 6s or higher.
