My Apple Watch has recently started counting steps when I am crocheting.

Yes there was an update recently
That would explain it. I hope there’s another update to fix this. Thank u for your help.

This comes up quite a lot,
and the general advice is to take the watch off during crocheting or turn fitness tracking off and back on again when you've finished.

Have you just updated your phone or watch software?.

That's probably made your watch's accelerometer more sensitive to movement.
While I typed this reply my watch said I took nearly 50 steps!!.
