I had a iphone se that got damaged I have a iphone 6plus to use but my current backup won't restore because my 6 plus has an older IOS (12 instead of 14) what can I do?

iCloud backup doesn’t include information that is synced and stored in iCloud, like Contacts, Calendars, Bookmarks, Mail, Notes, Voice MemosMessages*, shared photosiCloud Photos*, Health data, call history, and files you store in iCloud Drive.


*-If you had turned on Messages in iCloudiCloud Photos, your content is automatically stored in iCloud. 


What is stored in iCloud is available on all devices which uses the same Apple ID irrespective of what iOS version you have on that device.
