Lost formatting when moving Notes between accounts

In the Notes app, after moving a note from one account to another (ex. ICloud > Gmail), all formatting options are lost (ex. checklists, tables) and the formatting menu options are grayed out and inaccessible.

How can I move a note to another account without losing formatting options?

I usually close the Notes app when not using it, worked perfectly with the default opening screen with the notes already created and already in use under iCloud default Notes file, and for some cases I can even go straight to where I have been last time when using Notes before closing the Notes app when opening the Notes app again for example 2-3 hours later or even overnight. Suddenly today when opening the Notes the default screen reverts to Files selection screen (with drop downs of iCloud, My iPhone and my email address [might be the one generated with the Outlook app]) and now when I restart the app I got the default page of Files panel. Not pretty sure if this is a new feature but don't know how this suddenly happens as I am still using iOS14.1.

I am not able to move notes to a folder in Notes app. When I try to move a note to another folder, the list of folders in my iCloud account is all grayed out, and I am not able to drag a note to those folders either. I have other devices using this account that are older and do not support the newer features like smart folder. What should I do? Do I need to remove those devices from my trusted devices list or log out of my iCloud account on those older devices? I am having this problem on macOS Monterey 12.3.1 on a Mac Pro.

Formatting options only available in iCloud acct even when creating a New Note.
