When I navigate to a file in Finder (ex. a picture), I no longer get info about the file (ex. file size, date created, etc.). I've tried going to ~/Library/Preferences and deleting com.apple.finder.plist and resetting the PRAM but neither works.

Is this because you have selected to hide the Preview panel.
Open a Finder window, navigate to any file and click View in the menubar and
select Show Preview.

For each type of file, images, documents, movies etc,etc,etc you can click on View in the menubar and then click on Show Preview Options. Here you can select the information the preview window will display.
Actually, when I dragged com.apple.finder.plist to the Desktop and Relaunched Finder, that fixed it.
I didn't know about View / Show Preview Options, so that's helpful. I've always wanted Finder to always show me the dimensions of a video or picture.
