You don't. That backup feature has not been available for quite some time now. You used to be able to do that via iTunes. Today, iOS uses placeholders for the apps in the backup files and when necessary downloads the app again directly from the App Store.
Of course, if you were able to move the apps from your iPhone to a Mac then you still cannot run those iOS apps on your macOS.

You can't. They run on a different OS.

Until macOS fully supports running iOS apps, you really can't.
