How can I disable the e sim from my phone

You can simply turn the eSIM data plan OFF or You can delete the eSIM completely.

Open Settings ➔ Cellular ➔ Cellular Plans ➔ Here you can select the eSIM plan and then either select Remove Cellular Plan or Turn it OFF.
