7,1 Identifier and 32, 64 bit option to run applications

Can any one explain what "kernel" is and, if I have updated mid 2010 mbp with 2t ssd and 16g ram, what is the choice between 32 and 64 by default means? And, should I enable 64 by holding down 6 and 4 key during startup as process is irreversible ?

MacBook Pro 13″, macOS 10.13
