Can I sync my iPhone and iPad without automatically syncing to my Mac?

Is there any way to sync my phone and iPad and then manually sync to my Mac? Since I got my latest Mac my entire photo library (which is huge) is now on all my devices. If I try to delete any photos from my iPad or iPhone it wants to permanently delete from all my devices including my Mac. I want to use my Mac as my home base for photos and my iPad and iPhone to feed new images to my Mac but not for my Mac to send every photo back to my iPad and iPhone. The only way I can see to remedy this is to take my mobil devices off the cloud and upload photos etc. manually. Is there any other way? This has only been a problem since I got my lovely new Mac M1 :). Thanks for any help...Laura
