Trying to decide best way to set up dad's watch: if I set up with my phone in family pairing, can it replace his iphone? (so I don't have to buy a 6 or later for it to work, and so that I can manage it for him.)

How to change Apple Watch from family watch to one paired with its own iPhone I currently have two watches for my kids that were set up as family watches but now they each have their own iPhone and I would like to pair the watches with their iPhone. What is the best way to do this? Also, right now, they’re Apple watches have their own phone number because they were set up as family watches but if I pair them with their iPhone well that mean that one phone number will call both the watch and the phone? I assume I will need to speak with my cellular provider about this if I make this change, yes?

Does an apple watch with family set up (for an elder who lives in a different state) require the paired phone to be nearby for any reason? I understand that with family setup, I must pair and configure the apple watch for a family member (in this case, my elderly mother who lives in another state) with an iphone. She has no use for her own iphone, and refuses to carry it around, but the watch is small enough that she is willing - so family setup makes more sense. If I do so with my phone while I am visiting, but then take the paired phone away with me, will there be a point where my phone is necessary for her watch to work? Can I change settings remotely, download updates etc, or do they have to be on the same wifi network to do so? How likely is it that it would stop functioning for any reason without the paired phone available?
