iPad to control keynote

I do over 110 presentations a year. I would like to be able to control Keynote on my Mac mini via my iPad here’s the caveat I want to see my presenter notes on the iPad as well.

Mac mini, macOS 11.2

1 - Set up Keynote remote as per the directions in this Apple document: https://support.apple.com/en-gb/HT204378

2 - Open the presentation on the Mac

3 - Open Keynote on the iPad and tap the green play button

4 - Open the Layout screen on the iPad by tapping the Layout button:

5 - Select an option containing the Notes panel:
