Shut down short cut for MacBook Air with M1 processor

Various things happen when I press the power ID button.

A short press puts the laptop to sleep. I need to press the ID button or sign in, but there is no start progress bar.

A long press turns it off. I can tell because afterwards, on restarting, I see the start progress bar.

Sometimes, though, I see a pane with three options: sleep, turn off, or restart. How exactly is that done? I have not worked it out.

MacBook Air 13″, macOS 11.2
