How do I change the default font size for reading the body of messages in Mail 14.0?

How do I change the default font size for reading the body of messages in Mail 14.0? I know that I can use ctrl ⌃ + +, but I want the reading pane to default the body of the message to a larger font without lowering the default resolution.

Using com.apple.mail MinimumHTMLFontSize no longer works in Big Sur.

Mac mini 2018 or later

Does MAIL in Monterey still only offer 3 font settings under MAIL>Preferences>Fonts&Colors? I use Catalina IOS on my MAC. Increase viewer font size in Mac Apple Mail (MB Pro 14) The font size in Mac Apple Mail viewer is too small for me. Is there a way to make the list of emails in the viewer larger without changing and other font sizes? I know how to increase the size of an individual email using Command+; I am talking about the list of all the emails displayed in the viewer window. My (new) Mac is a 14' MB Pro and I migrated from a 15" MB Pro late 2013.

This does not change the default font size for HTML coded emails while command + "+" can. There is no way to set the default for this.
