I'm experiencing delays in receiving mail from GMail accounts to my apple mail system, sometimes I get a number of days in one update? I see the community posted similar problems in 2015. I am using OS Big Sur 11.2.2 and Mail Version 14.0 (3654.60.0.2.21).
Any ideas?

It sounds like you're experiencing some issues with your Gmail accounts on your Mac. We will be happy to assist you.
What you are describing sounds like it could be associated with your fetch settings.
Go to Mail and open it. Once open, select Mail beside the Apple logo on your top bar and then press Preferences. Check to see what your "Check for New Mail" is set to and try adjusting that.

In addition to the suggestions from the Community Specialist, note that there are sporadic GMAIL outages or slowdowns, see this web page for status https://downdetector.com/status/gmail/
Right now there were ~ 50 reported problems. When there is a GMAIL outage causing a slowdown, you will see that number increase to ~ thousands or tens of thousands or more. Also note that when there is a GMAIL outage the web-based interface is affected as well.
There were significant GMAIl outages a few months ago, each lasted roughly a day or so.
I was experiencing slow loading of gmail
This worked for me after years of searching for the answer
1. Log into your Gmail accounts.
2. Go to Settings (Gear - top right) -> See all settings -> Labels.
3. Uncheck all Show in IMAP boxes. If there are custom labels delete those as well
