Essentially unable to use iPod Nano with Apple Music (Big Sur)?

I still use an old iPod Nano and it appears I'm basically unable to use it with Music (OS Big Sur 11.2.2) the way I could with iTunes. While I can add songs to it in Music, I am not able to delete songs from it via the Music interface. I'm not able to see or edit playlists on it. And when viewing the iPod's contents via the Music interface, if you sort the songs by artist, it doesn't then sort by album - all the songs for each artist are jumbled up, making it very difficult to keep track of what's there.

Is there any way to fix this or improve it somewhat? Or are old-school iPod users just being left in the lurch?

Why on earth would Apple make this experience markedly worse? Why not just leave it as it was? This is a complete joke and I'm at a loss as to what to do, apart from keeping my old MacBook Pro with iTunes running for the sole purpose of continuing to use the iPod and a digital music file management application that actually works and makes sense.
