My iphone 12 stops charging at 80%? Is it normal? Is it okay if i will unplugged it at 80%? Is it considered full charge?

that's normal. It will slow charge and try to learn your habits from 80% to 100%.
This is controlled by a switch in Settings > Battery > Battery Health > Optimize Battery Charging.
So you can turn that off, but note that it does this to help ensure your battery lasts as long as possible (think years not hours)
The best practice you can adopt would be to plug your phone in at night when you go to bed and leave it.
Top off as needed throughout the day if the battery doesn't last you all day. Try not to let it go below ~20% if possible
